Tamale Making Class
Tamales, pasta, pierogi- all of these foods are becoming a lost art. We all love them but how many people learned how to make them from their Abuelitas? Their Nonas? Their Aitis?
This class will teach you not only how to make this delicious dish that is a true crowd pleaser, but will teach you how to make them moist and full of flavor.
The meat cooks for 2 days and will be brought cooked and ready to stuff the tamales with. You will learn how to make the fresh sauce that seasons it, the masa, how to use the corn husks, and how to cook them. You will then be able to eat as many as your heart desires. You will be left with some cooked tamales and if you wish it, up to 2 bags of uncooked tamales that can be frozen and cooked fresh for your family.
Chef Ashley brings some toppings for the tamales as well so they can be enjoyed street food style (right out of the corn husks) or plated and topped with cabbage, tomatoes, lime juice, cilantro, salsa, cheese and sour cream.
Funny story about how this all began: Chef Ashley lived right in town in Bakersville, NC and her house was the perfect location for a yard sale, so every year her friends would ask to have a yard sale and they would bring everything to her house to sell. After the first year, Ashley didn’t have anything in the house left that she wanted to sell, so she decided to make tamales and put out a sign selling them individually. The first day she sold out of 200. People would come and buy one or two, leave, and then come back and buy 12-36. People asked her to keep their names on a list and text them whenever she made the tamales and they would order several dozen. Every year she did that and would sell out within an hour. This went on for 6 years until she moved. And that is the story of how Chef Ashley became the Bakersville Tamale Lady.
This service must be reserved 48 hours in advance or more. This experience lasts about two to three hours depending on the number of people.
